‘Cooling’ the hot weather

Though most of us love the upcoming Lunar New Year but a majority of us also loathe the excessively hot weather! The last two years weather was quite bearable with more rainfalls but this year seems to have gone back to the older days where we see extreme hot weather during this period.

Practically I have to switch on the air condition during the day on most days so the kids can nap in comfort… yeah, I know I am spoiling them but it is really so hot!!! Poor Darrius and Glennedine will sweat all over in the afternoon while napping.

The past weeks, beside cooking porridge and boiling soup and having less stir frying food, I also boil more cooling tea for the family. Today is sugar cane with waterchestnuts and loh-hon-kao which is Darrius’s favorite.

These sugar cane is not those green type where you’ll normally get to buy from sugar cane juice stalls where they press out the juice. This is the other type which is used specifically for boiling the cooling tea or ‘liong cha’ by the Chinese. Water chestnuts and loh hon kao are the other ingredients which has the ‘cooling’ agent in them.
